WHAT’S FOR DINNER?
I groan as I notice my husband will be home in 15 minutes and I have NO IDEA what I’m making for dinner. There are too many more interesting things that keep my attention. It’s not that I’m lazy. I’m not. It’s not even that I’m not creative, because I am. It’s just that I have high standards for most of the food that we put on the table. We value healthy whole food, low glycemic, low gluten, low carb, dairy & refined sugar free. And sometimes, I don’t take the time to prep so those standards can be met.
WHAT WILL WORK FOR US?
I tried so many things which didn’t stick. Until I woke up one morning with the idea of the ‘Freezer Fiesta’! I decided to put together 4 rounds of 8 entrees. The entrees had to be easy, recognizable and super healthy. And, they had to be easily converted into vegetarian versions.
THE BIRTH OF THE FREEZER FIESTA!
Here’s where I’m at. I’ve created, used & lead 2 of the 4 rounds for the last 7 months and my life has not been the same since! Now, I always have at least 3 fully cooked thawing meals in my fridge. All I have to do to get dinner on the table is…
- toss a meal under the broiler for 7 minutes
- toss a salad from our famous ‘fridge salad bar’
- spoon some fresh fruit in bowls
I feel like I have a restaurant in my fridge! Here are 3 1/2 meals thawing next to our ‘fridge salad bar’. (Zuppa Tuscana Soup, Sticky Chicken, Southwest Pot Roast, & Thai Lettuce Wraps).
Oh yeah! And, I have over 50 other meals in the freezer ready to go! I take one out of fridge & replace it right then with my next choice. Here are some of our meals!

10 days before your Freezer Fiesta, order your kits. Some people start with the ‘Feel Amazing Kit’ on the left for their first session. The best value is to order the 3 kits on the right.
DUPLICATION
How to make a month of meals in a day? Determine how many adult servings in your family. Little children eat about 1/3 the amount of an adult serving. Adjust accordingly. So, if you have 3 little kids (under the age of 6 or so), and 2 adults, then you’d have 3 adult servings in your family. You’d want to double all the recipes (all the ingredients).

- MEAT STATION: with the red cutting boards
- VEGGIE WASHING STATION: other side of sink
- VEGGIE CUTTING STATION: in corner near sink (Here’s a pic of Simon, one of our teammate’s children, helping at their cutting station!)
- I save tons of time using the Genius Veggie Chopper! I have 2 Slicer Dicers and one 19 cup chopper.
- INGREDIENT STATION: dining table, with a section for each freezer fiesta family. Store cooler, bags, etc under the table, out of the way, so no one trips over it.
- MEASURE STATION: center island (I set up all measuring tools, Instant Protein & Fiber Plan here.)
To save time, put the measuring utensils right back after using them.

- COOKING STATION: stovetop with utensils on either side
*Note~ We now start the crock pot roasts & sauces immediately! They take 7-8 hrs to cook, so they need to be started before everything else.
We wash dishes as we go. We spray them down with Basic H2 Organic Degreaser & Scour Off Safe Cleanser.
